
1/2 cup margarine or shortening
2/3 - 3/4 cup maple syrup
1 egg
1 tsp. vanilla
In another bowl combine:
1 cup (Bob's Red Mill All Purpose Baking) flour
1/2 cup oatmeal flour (grind oatmeal in a blender or food processor)
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. sea salt
1/2 tsp. guar gum
Add the flour mixture to the margarine mixture.
Stir in:
1 1/2 cup oatmeal
1/2 cup nuts (we used slivered almonds)
1 cup chopped dates
Drop teaspoonfuls onto a cookie sheet. Bake at 350 degrees for 10-14 mins.
Just a side note - we like to line our cookie sheets with parchment paper. It keeps the cookies from sticking, and really cuts down on clean up time! :)
