Sweet & Sour Meatballs

This is a recipe that traditionally has all sorts of sugar in it! But, not when you do it my way!! :)

Sweet & Sour SMITH Meatballs

1 1/2 lb. ground beef
1/4 cup chopped onions
1 1/2 tsp. salt
pepper and a pinch of ginger
1/4 - 1/3 cup of fine oatmeal (enough to make the meatballs stick together)
1 egg
1/2 cup maple syrup (you may use less than that)
1/3 cup vinegar
2 tsp cornstarch
1 Tbsp tomato sauce (we use Molisana pureed tomato sauce)
1 Tbsp soy sauce (we use Bragg All Purpose Liquid Soy Seasoning - it's sugar free!)
1 can drained pineapple chunks (make sure they're not "in syrup"), or you can use fresh pineapple

Mix hamburger, onions, salt, pepper, ginger, oatmeal and egg together. Shape into balls. Brown in a frying pan and drain off the fat. Combine syrup, vinegar, soy sauce, pineapple chunks and add to the meatballs. Let that simmer for about 15 mins, and then add the cornstarch (mixed in 1 Tbsp. of water) just before you're ready to serve.
Serve it over rice with salad or your choice of side! Bon appetit!
