Cauliflower Crust Pizza
Serves 2
Ingredients:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings
Directions:
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself. One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.Bake at 450 degrees for 15 minutes. Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

*Note that toppings need to be precooked since you are only broiling for a few minutes.

Ridiculously Easy Maple Cookies
From start to finish, I bet these cookies took me less than 45 mins. to make and bake! And they're soooo yummers!!!

1/2 cup margarine, softened
1/2 cup maple syrup
1 egg
1 tsp vanilla
1 1/2 cups flour
** (I used 1/2 cup rice flour, 1 cup Bob's Red Mill, which needs 1/4 tsp guar gum) **
1/4 tsp salt
Combine all the ingredients. Drop teaspoonfuls onto a parchment-covered cookie sheet. For a little fun, I added 2 almonds to the top.
Bake at 375 degrees for 10-12 mins. or until golden browned.
Grab a glass of milk, and Munch! Munch! Munch!

It's a Baking Day!!! (brownies and muffins!)
My house smells sooooo good right now!!! :)
Mom and I have been baking all afternoon! I made a batch of Gluten Free Pantry Chocolate Truffle Brownie Mix for my dad, and a batch of my scrumptious chocolate brownie cake for mom and I.
My mom made Oatmeal Blueberry muffins! They're in the oven right now (I can't wait to eat one!!!) but if you want to make them, here's the recipe!
Combine 1 cup oats and 1 cup buttermilk (or sour milk) in a bowl.
In another bowl, combine:
1/2 cup outmeal flour (just grind up the oatmeal)
1/2 cup rice flour
1 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon sea salt
Add to the first oat bowl:
1 egg, beaten
1/4 cup oil (or melted margarine/butter)
3/4 cup honey
Add the oat mixture to the dry ingredients, and combine just until moistened.
Gently fold in 1 cup of fresh or frozen (well drained) blueberries.
Fill your muffin cups 3/4 full and bake at 400 degrees for 15-20 mins.
Mmmmm!!!! :)

What we had for Dinner!
The other night we had a yummy dinner of baked chicken with Dijon Tarragon spice (Epicure), mashed potatoes, and salad. It was delish!!
A lot of the time people ask me how difficult it is to make a meal for our household. As long as you stick to the basic staples of a meal (meat, vegetable, side) you're usually pretty safe.
I'm determined this weekend to try a recipe I have for cauliflour pizza crust! Wish me luck!

Rice Pilaf and Chicken!
I wnated to share with you the delicious dinner we had the other night!!! Get ready to get your "mmmm" on!! :)
Rice Pilaf
1/4 cup margarine
1 medium onion
1/2 cup chopped celery
1/2 cups uncooked rice
1/4 tsp. salt
dash pepper
1 bay leafe
1/8 tsp. thyme
2 2/3 cup boiling water with 2 chicken stock cubes dissolved (remember if you're using GoBio Organic Cubes, they're less salty then "normal".)
Saute the celery and onions in the margarine. Add the rice, thyme, salt, pepper, and bay leaf. Add the liquids and simmer for 10-15 mins.
We also used my handy dandy salad dressing recipe as a marinade for chicken breasts, and baked them in it. So good!!!!
Serve with a salad or your choice of veggies, and enjoy!! I know we did! :)
