Cauliflower Pizza Crust
Serves 2
Ingredients:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings
Directions:
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself. One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.Bake at 450 degrees for 15 minutes. Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
Enjoy!
*Note that toppings need to be precooked since you are only broiling for a few minutes.

Ridiculously Easy Maple Cookies

Combine all the ingredients. Drop teaspoonfuls onto a parchment-covered cookie sheet. For a little fun, I added 2 almonds to the top.
Bake at 375 degrees for 10-12 mins. or until golden browned.

It's a Baking Day!!! (brownies and muffins!)
My house smells sooooo good right now!!! :)
Mom and I have been baking all afternoon! I made a batch of Gluten Free Pantry Chocolate Truffle Brownie Mix for my dad, and a batch of my scrumptious chocolate brownie cake for mom and I.
In another bowl, combine:
Add to the first oat bowl:
Add the oat mixture to the dry ingredients, and combine just until moistened.
Gently fold in 1 cup of fresh or frozen (well drained) blueberries.
Fill your muffin cups 3/4 full and bake at 400 degrees for 15-20 mins.

Rice Pilaf and Chicken!
Rice Pilaf
1/4 cup margarine
1 medium onion
1/2 cup chopped celery
1/2 cups uncooked rice
1/4 tsp. salt
dash pepper
1 bay leafe
1/8 tsp. thyme
2 2/3 cup boiling water with 2 chicken stock cubes dissolved (remember if you're using GoBio Organic Cubes, they're less salty then "normal".)
Saute the celery and onions in the margarine. Add the rice, thyme, salt, pepper, and bay leaf. Add the liquids and simmer for 10-15 mins.
We also used my handy dandy salad dressing recipe as a marinade for chicken breasts, and baked them in it. So good!!!!
Serve with a salad or your choice of veggies, and enjoy!! I know we did! :)

Snowy Days and Family times!
I know I've been slack on my blogging lately... sorry!!! It's been a bit wild lately! But I hope to be back to trying some new recipes soon!
This is "Family Day" weekend, and we had my sister's family up Thursday to Friday for a visit, and my brother's family is going to be here Sunday to Monday! Lots of awesome family times to be had!!! :) I'm so excited! Then on the Monday we're all going to be at my other brother's to spend some time together!!!!! AND it even snowed last night!!! So I'm hoping it sticks around to play in!!! Hurray!!!
Today mom and I are going to be making some cookies for all the little ones - Oatmeal Chocolate Chip, and some Oatmeal Date cookies for us sugar and wheat free people! yumminess for all!!

Amazing Apple Crisp (with Blueberries!)
Sprinkle on a 1/2 cup blueberries (fresh or frozen)
Sprinkle over that 2 Tbsp. each of lemon juice and water, and 1/2 cup maple syrup.
For the cumble topping:
2/3 cup flour (we usually use oatmeal flour, which is just really fine ground oatmeal; but you can use any substitute flour combos)
1 1/2 cup oatmeal
1/2 cup margarine
2 Tbsp. maple syrup
Use a fork to smash the floury mixture together, until it has a crumbly consistency.
Sprinkle it evenly over the fruit.Bake at 375 defrees for about 35 mins, or until the fruit is tender.

Perfect Pancakes
There's nothing like waking up on a Saturday morning to fresh waffles or pancakes! I shared my favourite waffle recipe in an earlier post, but if you don't have a waffle maker, you can enjoy some scrum-didly-umpcious pancakes instead!
Here's what you do!
Blend together
1 1/2 cups flour (for wheat-free pancakes, use 1/2 cup rice flour and 1 cup kamut flour, or Bob's Red Mill All Purpose baking flour for the full amount)
3 tsp. baking powder
1/2 tsp. sea salt
Combine
1 beaten egg
1 3/4 cups milk
1 Tbsp. maple syrup
2 Tbsp. vegetable oil or melted shortening
Add the liquid ingredients to the dry, mixing only until combined. And you're ready to fry them up! The last time we made them, we used a combination of rice and kamut flour and they were "mmm mmm"!!! :)
This recipe makes about a dozen pancakes... but they're so yummy you may need to make a double batch!!
Also, like the waffles, if you have leftovers, you can put them in resealable bags and freeze them. This way you get breakfast all week long! Perfect pancakes indeed!!!

Oatmeal Date Cookies
1/2 cup margarine or shortening
2/3 - 3/4 cup maple syrup
1 egg
1 tsp. vanilla
In another bowl combine:
1 cup (Bob's Red Mill All Purpose Baking) flour
1/2 cup oatmeal flour (grind oatmeal in a blender or food processor)
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. sea salt
1/2 tsp. guar gum
Add the flour mixture to the margarine mixture.
Stir in:
1 1/2 cup oatmeal
1/2 cup nuts (we used slivered almonds)
1 cup chopped dates
Drop teaspoonfuls onto a cookie sheet. Bake at 350 degrees for 10-14 mins.
Just a side note - we like to line our cookie sheets with parchment paper. It keeps the cookies from sticking, and really cuts down on clean up time! :)

New Grocery Store Finds!
We had spaghetti for dinner last night, and tried a new pasta sauce we found!
Antico Organic Tomato Basil Pasta Sauce
It was yummy!! Lots of flavour, and completely gluten and sugar free! A lot of pasta sauces have sugar in them, so it was exciting to find one that didn't! My mom usually makes a homemade pasta sauce, which is delish!!!! But we didn't have time to thaw it out from the freezer, or the ingredients to make it fresh, and it was nice to just have an easy jar to grab for once.
I also found a recipe yesterday for cauliflower pizza crust... haven't tried it yet, but I want to!

INGREDIENTS:
corn starch, non hydrogenated palm oil, MSG free yeast extract, natural chicken and rosemary flavorings, roasted onions, chicken fat, chicken meat, tumeric, rosemary, celery, garlic, parsley
-- We find this to be a lot less salty then 'regular' stock bases, so you may need to add more then you normally would --
Kitchen Basics Original Beef Cooking Stock
INGREDIENTS:
beef stock, beef flavor (natural flavor, beef stock), vegetable stocks (carrot, leek, tomato, onion, garlic) sea salt, honey, thyme, pepper
Bragg All Purpose Liquid Soy Seasoning (I used this in my Sweet & Sour SMITH Meatballs recipe)

Easy Peasy Salad Dressing or Marinade
It's so versatile, yet so easy!
1/2 cup vegetable oil
1 cup honey
1/4 cup lemon juice
1/8 cup dijon mustard
Mix it all up and put it in a resealable container. It'll last in the fridge for... well, I don't know for how long! We always use ours up too quickly! haha We use an old honey squirt container to keep it in, so it's super handy!

Sea Salt and what!??!
Sweet & Sour Meatballs
This is a recipe that traditionally has all sorts of sugar in it! But, not when you do it my way!! :)Sweet & Sour SMITH Meatballs
1 1/2 lb. ground beef
1/4 cup chopped onions
1 1/2 tsp. salt
pepper and a pinch of ginger
1/4 - 1/3 cup of fine oatmeal (enough to make the meatballs stick together)
1 egg
1/2 cup maple syrup (you may use less than that)
1/3 cup vinegar
2 tsp cornstarch
1 Tbsp tomato sauce (we use Molisana pureed tomato sauce)
1 Tbsp soy sauce (we use Bragg All Purpose Liquid Soy Seasoning - it's sugar free!)
1 can drained pineapple chunks (make sure they're not "in syrup"), or you can use fresh pineapple

The tiny, high-fat germ portion contains the plant embryo, and is usually removed during processing to extend the shelf life of the flour. The bran, or tough outer coating of the kernel, is also removed during the manufacturing process for white flour. All three components contain a plant storage protein known as gluten."

Chocolate Bran Cookies
Chocolate Bran Cookies
Ingredients:
6 Tbsp margarine
6 Tbsp unsweetened applesauce
1 cup brown sugar (I used 3/4 C maple syrup)
1 teaspoon cornstarch mixed with 1 tablespoon water
1 1/4 cups flour (I used 1 c Rice flour and 1 1/4 c kamut flour, there's lots of combos you could use.. I just experimented :) I bet you could use all rice, or add some tapioca or potato flours) 1/2 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1/2 to 3/4 cup wheat bran (ended up using 3/4)
Directions:
Preheat the oven to 350 degrees Fahrenheit. Mix margarine with applesauce, sugar and vanilla. Beat in the cornstarch mixture. Mix in cocoa, then baking soda and baking powder, then salt, then flour. Add the wheat bran little by little (while mixing) until desired consistency (a little less stiff than your regular cookie dough.) Plop spoonfuls of the batter onto a lightly greased cookie sheet. Bake 8-10 minutes, until the tops are fairly solid. They're so soft!! Almost cakey :) Yummo!!!! Serves: 2 dozen cookies.
I'll warn you, they look like... well, "droppings" when you make them... but they taste delicious!

Starting a'New!
So I've decided that this blog needed to be something that was helpful to other people... something that would be of benefit to ordinary people!
Drum roll please!!!!! :)
Guess we can start with what this blog will be about! So, here's my story.
Over a year ago, I was having a really hard time with breakouts, all over my body, to the point of hives!!! It was embarrassing of course, but it was also painful! My sister told be about a naturopath that she had taken my nephew to after he was literally COVERED in ecsema as a baby (poor kid, looked like a little burn victim!). The "doctor" was able to tell my sister what to change in his diet, and what not to feed him, and within a month his skin was completely clear! Music to my ears of course!
I booked an appointment with the same lady, and she told me I was allergic to sugar! RATS!!!!!!! haha You can imagine how THAT news went over!!! Well, after being completely, and I mean TOTALLY sugar free for over a year, my skin has been soooo much better!! And if I do accidentially have sugar, I'll know within a couple of days!
Besides my skin clearing up, I also noticed I had a lot more energy, and I lost 20 lbs! :) Major bonus!!
Well, just when things started to get "normal" again, we found out from the same "doctor" that my dad had a wheat intolerance! Sheesh!!!! Needless to say, any form of food preparation is an experiment at my house :) But one that we're learning from!
Hopefully, some of the recipes and information I share on here will be of benefit to you!! And please feel free to share any helpful hints that you've learned if you have either of these... shall we say... little annoyances!
